Raw Vegan Crispy Banana Bites Cereal



So, I had a lot of very ripe bananas left lying around and was not in a baking mood, decided to bust out the Excalibur dehydrator and get my raw on. Let's face it, banana bread tastes delicious but is not necessarily the best thing to be eating all the time, even when it's Vegan and gluten-free. This recipe is very straight forward, fun, but does require patience as it's a 24 hour drying process. Enjoy!











RAW VEGAN CRISPY BANANA BITES CEREAL:

Ingredients:
1 Cup raw almonds soaked overnight
1 Cup raw pecans soaked 4 hours
2-4Very ripe bananas (depends on how strong a banana taste you prefer, I used 4)
2 Tbsp maple syrup
3 Tbsp ground tiger nuts
3 Tbsp ground golden flax
1 Tbsp lime juice
2 tsp cinnamon ground
1 1/2 tsp nutmeg ground
1/2 tsp allspice ground
1/2 tsp pink sea salt
1 Tbsp vanilla extract or 1 tsp ground vanilla
2 Cups unsweetened almond milk

Method:
-Rinse soaked nuts very well in cold water
-Mash bananas
-Place nuts in blender with almond milk and blend until smooth.
-Place mixture in bowl, add lime, vanilla and tiger nuts, mix well.
-Add spices, flax, and sweetener, then mix well.
-Spread out on lined teflex sheets and place in dehydrator at 105 degree raw food setting for 10 hours.
-Flip over to other side and try to remove parchment paper or sheet, if some of paper remains, don't be concerned. It will come off easily when finished dehydrating.
-Dehydrate for another 14-18 hours, checking to make sure it is crisp, dry, and easily snaps into pieces.
-Gently break into bite sized pieces and store in an airtight container for 1-2 months.
-Serve with fresh fruit and milk of your choice or crumble over coconut yogurt.
