Firstly, let me apologize for not getting this recipe out sooner but it is a recipe that needs to be made the day of and as I am skin flint broke right now, making a recipe twice with Paleo ingredients is just not an option. I tried to wake up earlier to bake these quickly so I could get the post up, today. I am surprising my mother with one of her favs, Madelaine's with strawberries. They are going to be scarfed down with a delightful cup of tea and I know she'll be happy. The original recipe comes from another blog, I changed the recipe and made some additions, I gotta find the link but will add it when I find it. Found it!

So here you go, my version of these scrumptious pillowy bites. Enjoy!
Paleo Strawberry Madeleine's
Makes 24 small and 18 Large
Ingredients:
3 Large eggs
1/2 Cup maple syrup
3 Tbsp coconut oil
1 Tbso vanilla
1/2 Cup strawberries, frozen, chopped small
1/8 Cup almond milk with 1 Tbsp lemon juice or apple cider vinegar stirred in to "buttermilk" it
1 1/2 Cup ground almond
3 Tbsp arrowroot flour
3 Tbsp coconut flour
3/4 tsp Baking soda
Method: Preheat oven to 350 degrees F
-In a bowl mix dry ingredients together
-In a separate bowl mix wet ingredients except strawberries
-Stir well then gently fold in strawberries and stir.
-Grease a Madeleine pan with a small amount of coconut( a little goes a long way)
-I have a large Madeleine pan so I used a Tbsp for each one but a regular pan usually holds a rounded tsp. Go by what size pan you have.
-Bake for 12-15 minutes, turning pan half way after initial 6 minute baking to ensure even browning and baking.
-Remove from oven, allow to sit in pan for 2-3 minutes then remove onto a paper towel or napkin lined tray, plate,or basket. Serve as is or with some Nutella or strawberry jam. Lemon curd would be nice as well, here's my recipe for lemon curd should you like to try to make it:
